Tabouleh (authentic recipe)

Ingredients

  1. 3 medium tomatoes (diced)
  2. 3 scallions (diced)
  3. 2 medium cucumbers (peeled & diced)
  4. 1 large green bell pepper (diced)
  5. 1 cup parsley; chopped finely
  6. 1 cup bulgur-medium (cracked wheat)
  7. 1 lemon (freshly squeezed)
  8. 1/4 cup olive oil

Preparation

Soak bulgur with 2 cups of water in a medium bowl for 15 minutes. Drain excess water and mix lemon juice with olive oil in a separate small bowl. Add lemon juice mixture to bowl with bulgur and add remaining ingredients; mix well. Add salt & pepper to taste and fill pocket & enjoy!
