Shrimp & Avocado Pockets
- 1 lb. small or medium cooked shrimp (rinse & dry)
- 2 avocados (diced)
- 3 Tbsp. olive oil
- 2 medium garlic cloves (minced)
- 2 Tbsp. chopped cilantro
- 2 Tbsp. lime juice
- 1 tsp. cumin
- 1 tsp. jalapeno sauce (optional)
Whisk together lime juice, garlic, cumin, olive oil, jalapeno sauce and cilantro. Place avocado in mixture and let marinate for 5 minutes. Add cooked shrimp and mix gently. Add salt & pepper to taste and fill pocket and enjoy!
