Broccoli Quiche Pocket
- 1/3 cup egg whites
- 1/3 cup broccoli (chopped)
- 2 Tbsp. low fat cottage cheese
- 1 Tbsp. onion (minced)
- 1 Tbsp. grated Parmesan cheese
Coat skillet with nonstick cooking spray & place on medium heat. Add onions & cook until soft. Mix egg & Parmesan cheese in a bowl, add to skillet and cook for 1 minute. Add broccoli & cottage cheese; stir lightly until eggs are firm. Add salt & pepper to taste. Fill pocket and enjoy!
