Time Preparation: 3 minutes

Ingredients

  1. 1/3 cup egg whites
  2. 1/3 cup mushrooms(your choice) chopped
  3. 2 Tbsp.shredded low fat swiss cheese
  4. 1 Tbsp. chopped parsley(optional)

Preparation

Coat skillet with nonstick cooking spray and place on medium heat.Saute mushrooms for 3-4 minutes or until tender.Add egg, cheese and parsley and stir until firm. Salt & pepper to taste. Fill pocket & enjoy!

Lox & Cream Cheese Pocket

Servings: 1

Time Preparation: 3 minutes

Ingredients

  1. 2.5 oz. unsalted salmon lox
  2. 1/2 medium tomato; sliced
  3. 1 Tbsp. low fat cream cheese
  4. 1 onion slice (optional)

Preparation

Spread cream cheese in pocket. Add salmon, tomato, onion and enjoy!

Bacon, Cheese & Tomato Pocket

Time Preparation: 3 minutes

Ingredients

  1. 2 oz. low fat cheddar cheese
  2. 2 oz. Canadian bacon or ham
  3. 2 tomato slices

Preparation

Heat meat in microwave for 10 seconds on high.Layer cheese, tomato and meat in pocket. Toast the filled pocket on med-high and enjoy!

Creamy Summer Berry Pocket

Servings: 1

Time Preparation: 3 minutes

Ingredients

  1. 1/2 cup fresh berries (raspberry
  2. strawberry
  3. blueberry or blackberry)
  4. 1 Tbsp. low fat whipped cream cheese
  5. 1 Tbsp. sugar-free preserves (use a matching berry preserve)

Preparation

Spread inside of pocket with cream cheese and spread the other inside pocket with the preserves. Add berries & enjoy!

Ingredients

  1. 4 oz. low fat whipped cream cheese
  2. 1/3 cup pitted dates (chopped)
  3. 1/4 cup walnuts (chopped)
  4. 1 tsp. cinnamon

Preparation

Mix the dates, walnuts and cream cheese. Sprinkle with cinnamon and spread 2 tablespoons into pocket and enjoy!

Ingredients

  1. 1/3 cup egg whites
  2. 1/3 cup broccoli (chopped)
  3. 2 Tbsp. low fat cottage cheese
  4. 1 Tbsp. onion (minced)
  5. 1 Tbsp. grated Parmesan cheese

Preparation

Coat skillet with nonstick cooking spray & place on medium heat. Add onions & cook until soft. Mix egg & Parmesan cheese in a bowl, add to skillet and cook for 1 minute. Add broccoli & cottage cheese; stir lightly until eggs are firm. Add salt & pepper to taste. Fill pocket and enjoy!
